Convection oven vs gas oven?

Hi everyone, I have just discovered a revelation that will change your macarons forever. My oven is a convection oven, but for some reason you have to press a button on the oven for it to actually spread the air around the oven evenly. So all this time, I have been using the regular setting, which is most likely similar to the gas-powered ovens. A friend pointed out to me that the macarons I made at home were not as fluffy as the ones I made at work, which has a convection oven. The insides seemed to be too moist, like undercooked. However I use the same recipe at work, and they turn out with fluffy insides. Here is a few comparison pictures.

This one is too moist inside, baked in nonconvection.        

These are perfect, baked in convection.

Same recipe, different results. All due to a button on my oven. I thought that having a convection oven meant pressing "bake" would automatically make it convection. Maybe it was due to the fact that I didn't exactly know what convection means. Basically, a convection oven has a fan in the back, and the heat is more evenly distributed than a gas oven. In a gas oven, the heat either comes from the bottom or top, making the heat uneven.

So if you have a convection oven, it would be easier to bake better macarons. :3 Good luck to you all~

  2. Have you ever had issues in the commercial oven with the fan being too robust? What temp are you cooking at? I just switched to a commercial oven and I can only use the top shelf, which defeats the purpose. The other shelves produce mostly warped macs.

    1. Nope I haven't had any problems with the fan being too strong, mine is pretty tame. haha & I'm cooking it at 300 F. Yeah usually can only use the top rack :/

Please :-) I have tried and tried but don't get results like yours :-( I have tried baking at 300, 310, ..... 325F top rack, middle rack with parchment and silpat, but not perfect. Also I had another question, when I used silpat. a part of the macaron bottom stuck to the silpat while removing them. I removed them after cooling. I noticed while baking that the tops had partially detached from the bottom while rising and this is the part which was stuck to the silpat. Why did this happen? I was baking on the middle rack on silpat and the oven temp was reading between 300 to 310 on the oven thermometer. Please help Thank you so much.

  7. Thanks for the good read. At first I really wasn't sure which oven I was going to end up going with. I was having the hardest time figuring out which one would be better, electric, or gas; but this post really helped me understand the differences between the two. Now I just need to pull the plug and make the decision. I'll diffidently keep this post in mind when I do.

  10. Hi Natalie! I have one question. I have the worst tiny oven on the planet in my apartment. I've tried making macarons in it 20 times, just a mess. my apartment won't let me upgrade my panel to allow me to purchase a new oven. Do you think its possible to cook macarons perfectly in a countertop convection oven?

  15. "convection" means there is a fan that circulates the air inside the oven. Convection settings can be found on either gas or electric ovens. Hope that helps. There seems to be some confusion here about terminology.
